
Experimental microdistillery, Method & Madness, have branched out even further with two new releases this week: Pot Stills finished in a Wild Cherry Wood Cask and an Acacia Wood casks.
Who are Method & Madness?
Part of the infamous Irish Distillers Group based in Midleton, Co. Cork, Method & Madness was conjured up in 2017 from an idea to team up Masters and Apprentices across the group to create innovate and experimental new whiskeys that push the boundaries of what we expect from a classic Irish whiskey. Their portfolio includes Single Grain, Single Malt and Single Pot Stills, as well as a micro-distilled gin that was released earlier in 2019.
New to the IWM: Single Pot Still finished in Wild Cherry Wood Casks
This new pot still starts its journey maturing in the usual sherry and ex-bourbon casks. It is then finished in a variety of nine casks crafted from Wild Cherry Wood, ranging from as little as seven months all the way to four years. It is believed to be a world-first for Irish whiskey. This type of wood is much more porous than its more traditional barrel counterparts. The flavours from the wood and the spirit mix more readily, giving a much deeper flavour profile. The whiskey is bottled at 46% ABV and is limited to just six markets worldwide, including Ireland and the UK.
Flavour Profile
The Wild Cherry Wood casks creates a real contrast in this tasting experience. This includes both long and fresh flavours starting in the nose but a finish of warmth and spice.
Nose. Elements of Coconut Fibre, Shredded Ginger, Fine Wines.
Taste. Black Tea, Fresh Green Herbs and Pot Still Spices.
Finish. Long with a Prickly Spice and flavours of Toasted Hazelnut.
