Method and Madness Single Pot Still

Method and Madness Irish whiskey

A Single Pot Still whiskey finished in French chestnut and matured in American and Sherry barrels. This stunning whiskey is a favourite with our tour guides and is believed to be an underrated Irish whiskey. The Method and Madness range was designed to push the boundaries of Irish whiskey and it has successfully done so by creating a sweet fruity yet spicy whiskey.

Glendalough 13

Glendalough 13 Irish whiskey

A beautiful 13-year-old Irish Single Malt whiskey finished in Mizunara casks. The whiskey was matured in bourbon barrels before being filled into casks made with Japanese Mizunara. The original plan was to release the whiskey as a 12-year-old; however, it was decided to mature the whiskey for another year in honor of the rugby great, Brian O’Driscoll, a shareholder in the company. O’Driscoll wore the number 13 on his jersey during his playing years. This gem is another top pick amounst our tour guides due to its velvety mouth feel and spicy lingering finish.

 West Cork Glengarriff Bog Oak

West Cork Irish whiskey

A smoky whiskey matured in an ex-Sherry Butt and finished in heavily charred virgin white oak casks. The whiskey is always recommended to visitors by our bartenders due to its stunning smoky and brown sugar finish and it is also a tough one to find outside of Ireland.

Tullamore Dew XO Rum Cask Finish 

A triple distilled, triple blend of pot still, malt and grain Irish whiskey, finished in first fill XO rum casks to deliver sweet tropical flavours. The XO rum cask finish pays tribute to the role of Irish immigrants in the development of rum in the Caribbean in the 17th century. This whiskey is a hidden gem in our bar as it is not only hard to get your hands on, but it is also one of the only whiskeys that gives a tropical finish.

Kilbeggan Single Grain 

Kilbeggan Irish whiskey

A single grain whiskey aged in ex-bourbon barrels and finished in a marriage of ex-bourbon and different fortified wine barrels, giving it a smoothness that makes it great for drinking neat and for cocktails. It is a wonderfully smooth whiskey which is why it is a big hit with our team.
